I loved all three words in the title and figured, how could you go wrong with

HONEY

CLOUD

PANCAKES?

These are perfect for the weekend when you have a little more time.  If you ask me, these are the pancakes to beat – they are heavenly.  Big thanks to Things We Make for this gorgeous photo and spectacular recipe!

Honey Cloud Pancakes

Ingredients:

1 large egg

1 egg white

1/4 cup warmed milk

1/4 cup flour

2 teaspoons honey

Pinch salt

Dash of vanilla extract

1 tablespoon butter

Sliced peaches or berries

Directions:

Preheat the oven to 390 degrees.

In one bowl mix the whole egg, milk, flour, salt, honey and vanilla.  In another bowl beat one egg white until peaks are stiff.  Heat small crepe pan with butter.  Fold the egg whites into the batter and pour into hot pan.

Leave on stove top for 3-4 minutes or until the edges turn brown.  Add fruit to the top and put into oven for 7 minutes.

It should look puffed up and golden.

Drizzle honey and enjoy.
